Blazer

What you need:

  • 60ml Cognac
  • 2 dashes of Peach Bitters
  • 1 tsp brown sugar or honey
  • 1 large swathe of Orange peel
  • Half a cinnamon quill

Method:

Place all ingredients except the bitters into a brandy balloon and place on a rocks glass.
Warm the outside with an open flame then proceed to ignite the contents, and allow to burn while turning the glass constantly. Once the flavours have imbibed, put out the flame by placing a napkin over the glass then pour into a fresh balloon.
